What you'll need

FOR THE WAFFLES

  • 3 eggs
  • 1 ½ cup oats
  • 1 cup cottage cheese
  • 1 tablespoon maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ¼ cup almond milk or more if needed
  • 1 teaspoon vanilla extract
  • 1 ripe banana (4 oz)
  • 1 teaspoon chia pudding add it after blending everything

TOPPINGS

  • Blueberries
  • Raspberries
  • 1 tablespoon almond butter
  • Sugar free maple syrup

Procedure

  1. Preheat your waffle maker.
  2. Lightly grease it with butter or cooking spray if needed.
  3. In a blender or food processor, combine: cottage cheese, eggs, oats, baking powder, vanilla extract, maple syrup, banana, cinnamon or seasonings. Blend until smooth.
  4. Let it rest: Add chia seeds and let the batter sit for 5 minutes so the oats soften and thicken slightly.
  5. Cook the waffles: Pour the batter into the preheated waffle iron. Cook according to your waffle maker's instructions (usually 3–5 minutes), until golden brown and crispy on the edges.
  6. Serve: Sweet version: Top with fresh fruit , yogurt, and maple syrup.
  7. Savory version: Top with avocado, eggs, smoked salmon, or herbs
