What you'll need
FOR THE WAFFLES
- 3 eggs
- 1 ½ cup oats
- 1 cup cottage cheese
- 1 tablespoon maple syrup
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- ¼ cup almond milk or more if needed
- 1 teaspoon vanilla extract
- 1 ripe banana (4 oz)
- 1 teaspoon chia pudding add it after blending everything
TOPPINGS
- Blueberries
- Raspberries
- 1 tablespoon almond butter
- Sugar free maple syrup
Procedure
- Preheat your waffle maker.
- Lightly grease it with butter or cooking spray if needed.
- In a blender or food processor, combine: cottage cheese, eggs, oats, baking powder, vanilla extract, maple syrup, banana, cinnamon or seasonings. Blend until smooth.
- Let it rest: Add chia seeds and let the batter sit for 5 minutes so the oats soften and thicken slightly.
- Cook the waffles: Pour the batter into the preheated waffle iron. Cook according to your waffle maker's instructions (usually 3–5 minutes), until golden brown and crispy on the edges.
- Serve: Sweet version: Top with fresh fruit , yogurt, and maple syrup.
- Savory version: Top with avocado, eggs, smoked salmon, or herbs
